Bacon-Wrapped Stuffed Sausage from Big Daddy's BBQ Pit

Who doesn't love anything wrapped in bacon? These sausages stuffed with cheese are absolutely delicious. Kick up your next gathering with this twist on a traditional sausage sandwich — crispy bacon on the outside, juicy sausage on the inside, and a gooey melted cheese center that makes every bite incredible.

🥓 What You'll Need

  • 1 lb link sausage
  • 5–6 pieces string cheese
  • 6 slices thin bacon
  • Your favorite savory BBQ rub
  • Peppers and onions for topping (optional)
  • Sausage rolls or buns for serving

How to Make It

  1. Set up your grill for indirect cooking at 375°F. Big Daddy used a Weber Kettle with Royal Oak Charcoal — any grill works.
  2. Make a slit down the length of each sausage link, cutting almost all the way through but not separating it.
  3. Use your fingers to make a well in the sausage where you made the slit. Press a piece of string cheese down into the well and form the sausage back around it to enclose the cheese.
  4. Wrap each stuffed sausage tightly in a slice of thin bacon, securing it as needed.
  5. Season all over with your favorite savory BBQ seasoning.
  6. Place on the grill indirect and cook for about 1 hour, or until the internal temp reaches 165°F and the bacon is crispy.
  7. If desired, fry peppers and onions in a skillet while the sausages cook — they make a great topping.
  8. Serve on a toasted roll with your toppings of choice.
🔥 Big Daddy's Tips:
  • Thin bacon is key — thick cut won't crisp up as well in the time it takes the sausage to cook through.
  • Don't cut all the way through the sausage when making the slit — you want a pocket, not two pieces.
  • String cheese is perfect for this because it melts evenly and holds its shape while you assemble. Shredded cheese tends to fall out.
  • Indirect heat is a must — direct heat will burn the bacon before the sausage is cooked through.
  • Toothpicks can help hold the bacon in place while it sets on the grill — remove before serving.
  • Make it your own — jalapeño cream cheese, cheddar, pepper jack — any cheese works great stuffed inside.

Make It Your Own

This recipe is wide open for customization. Swap the string cheese for a strip of jalapeño cream cheese for a spicy kick. Try different sausage varieties — bratwurst, Italian, or andouille all work great. Top with sauerkraut and mustard for a classic vibe, or go with grilled peppers, onions, and hot sauce.
