This is a go-to snack at Big Daddy's house. Before we started making these at home we'd always just buy them from the store — but homemade pork rinds are on a completely different level. They're fresher, crispier, and you control exactly how much seasoning goes on them. Keto-friendly, low-carb, and dangerously addictive.

  • Oil heated to 400–425°F
  • Your favorite seasoning — applied immediately after frying

How to Make It

  1. Heat your oil to 400–425°F. A deep fryer works great, or use a heavy Dutch oven with a thermometer.
  2. Drop a small handful of pork rind pellets into the hot oil. They'll sink briefly, then puff up dramatically within seconds.
  3. Once puffed and floating, remove immediately with a slotted spoon — they go from perfect to overdone fast.
  4. Season immediately while still hot so the seasoning sticks. Toss in a bowl to coat evenly.
  5. Spread on a paper towel-lined tray to drain briefly, then serve right away.

🔥 Big Daddy's Tips:
  • Oil temperature is everything — too low and they won't puff fully, too high and they burn. 400–425°F is the sweet spot.
  • Don't overcrowd the fryer — work in small batches so the oil temp stays consistent.
  • Season the second they come out — hot pork rinds absorb seasoning beautifully. Waiting even 30 seconds means the seasoning won't stick as well.
  • Store any leftovers in an airtight container — they'll stay crispy for a couple of days, though they rarely last that long.
  • These make a fantastic keto-friendly chip substitute for dips like the Jalapeño Popper Dip or Crab Rangoon Dip.
