Keto Friendly Kale Soup

This is an extremely delicious soup that is healthy and hearty. The pumpkin gives this soup a richness and flavor depth like no other. Use any type of ground meat you prefer; we used burger and sausage but venison or turkey would work great as well!

 

·        2 TBSP of Olive Oil

·        1 LB Ground Sirloin or Chuck

·        1 LB Italian Sausage

·        1 White Onion Diced

·        4 Cloves of Minced Garlic

·        1 TSP of Marjoram

·        1 TSP of Herbs De Provence

·        1 TSP of Sage

·        64 oz. Beef Bone Broth

 

·        8 oz. of Kale

·        6 oz. Matchstick Carrots

·        2 TSP of Black Pepper

·        1 TSP of Salt

·        1 TSP of Garlic Powder

·        1 TSP of Basil

·        1 TSP of Oregano

·        4 Stalks of Celery Sliced

·        1 15oz. Can of Pumpkin

 

Brown your meat in a Dutch oven and strain off some of the grease. Add your seasoning, onion, garlic, carrots, seasonings, pumpkin and 32oz of the broth. Cover and let simmer for 20 minutes. Add your Kale and the other 32 oz. of broth. Let simmer 10 more minutes covered. Once done, remove from heat and let cool a bit, and then enjoy!
