Ultimate Pizza Smash Burger from Big Daddy's BBQ Pit

What happens when you combine the best of a smash burger with all your favorite pizza toppings? This. The Pizza Smash Burger is the perfect spin on a classic — one patty of Italian sausage, one patty of ground beef, smashed thin on a hot griddle, loaded with provolone, mozzarella, and pepperoni, all stacked on a toasted crusty roll with pizza sauce. Make it your own with whatever pizza toppings you love!

🍔 Ingredients

Per Burger
  • 4.5 oz Italian sausage, formed into a ball
  • 4.5 oz ground beef, formed into a ball
  • Heath Riles Parmesan Garlic Rub
  • Heath Riles Everyday Rub
  • Malcom's Italian Stallion seasoning
  • 1 crusty hamburger roll, toasted
  • ¼ cup pizza sauce
  • 2 slices provolone cheese
  • ¼ cup shredded mozzarella cheese
  • Pepperoni slices

How to Make It

  1. Heat your griddle to medium-high. You want it screaming hot for a proper smash.
  2. Place both the Italian sausage ball and the beef ball on the griddle separately. Using a burger press, smash each one down as thin as possible — this is what creates that crispy, lacey edge.
  3. Season both patties on top with the Everyday Rub.
  4. Once the edges start to look cooked and the patties release easily, flip both.
  5. Immediately add a slice of provolone to each patty, then a sprinkle of mozzarella on top of the provolone.
  6. Lay pepperoni slices over the cheese on each patty.
  7. Cover with a dome or lid to trap heat and melt the cheese completely.
  8. At the same time, toast your crusty roll on the griddle cut-side down until golden.
Build the Pizza Burger
  1. Spread pizza sauce generously on both sides of the toasted roll.
  2. Place the beef patty on the bottom bun first.
  3. Stack the Italian sausage patty directly on top.
  4. Close it up, press down slightly, and get after it.
🔥 Big Daddy's Tips:
  • The griddle needs to be properly preheated before the meat goes on — medium-high and give it a few minutes. A hot surface is what creates that crispy smash crust.
  • Smash immediately when the ball hits the griddle — once it starts cooking it won't smash as thin.
  • Covering with a dome after adding the cheese is the key to getting a full, even melt without overcooking the patty.
  • The Italian sausage patty adds incredible flavor — don't skip it or substitute regular pork sausage.
  • A crusty roll is non-negotiable here — a soft bun will get soggy under the sauce and two patties. You need structure.
  • Make it your own — mushrooms, banana peppers, black olives, roasted garlic, jalapeños — anything you'd put on a pizza works here.

Make It Your Own

The beauty of the Pizza Burger is that the toppings are completely up to you. Go white pizza style with garlic butter instead of marinara and swap in ricotta. Add banana peppers and black olives for a supreme version. Throw on some sautéed mushrooms for a fungi pizza vibe.
