Big Daddy's Seafood Boil

We love doing seafood boils with friends, especially in the summer and around the holidays! This is a simple recipe and not as spicy as some others out there — the fresh citrus fruit adds a incredible flavor to the pot that sets it apart. If you've never done a seafood boil at home, this is the one to start with.

🦐 The Seafood & Proteins

  • 9 lbs shrimp
  • 6 lbs crab legs
  • 4 lbs smoked sausage

🌽 The Sides

  • 5 lbs red potatoes
  • 24 half ears frozen corn
  • 1 stick butter

🍋 The Boil Base

  • 30 quarts water
  • 6 oranges, quartered
  • 6 lemons, quartered
  • 2 whole garlic bulbs, halved
  • 2 white onions, quartered
  • 2 cups seafood boil seasoning
  • 1 pouch Zatarain's Crab Boil seasoning
  • ½ bottle liquid crab boil seasoning
  • ¼ cup King Craw seasoning

Cook Timeline

Start
Bring 30 quarts of water to a full boil in your pot. Add the oranges, lemons, onions, garlic, and all seasonings.
15 min
Add the red potatoes and smoked sausage. Let the base build flavor while the potatoes start cooking.
30 min
Add the crab legs. Boil for 5 minutes.
35 min
Add the shrimp. Boil for 5 more minutes.
40 min
Add the frozen corn and shut off the burner. Drop the butter in and let everything soak for 20 minutes. This is where the magic happens.
60 min
Remove the basket from the pot and serve! Dump it out on a table covered in butcher paper for the full experience.

  • The 20-minute soak after shutting off the burner is non-negotiable — the seafood soaks up all that seasoned liquid and takes everything to the next level.
  • Fresh citrus in the boil is a game changer — the oranges especially add a sweetness that balances the spice beautifully. Don't skip it.
  • This recipe is milder than most seafood boils — if you want more heat, add more liquid crab boil or a few dashes of cayenne.
  • Dump it out on butcher paper on a table for the full experience — it makes for a great party presentation and easy cleanup.
  • Serve with crusty bread to soak up the seasoned broth — it's incredible.
  • Make sure your pot is big enough — 30 quarts of water plus all the ingredients needs a serious pot. A 100-quart turkey fryer works great.

Make It Your Own

Seafood boils are incredibly flexible. Add lobster tails for a special occasion upgrade. Throw in some clams or mussels for extra variety. Adjust the seasoning level to your crowd — dial back the liquid crab boil for a milder boil, or double it if you want serious heat.
