Pork Steaks

 

·        10 LB Boston Butt

·        Heath Riles Garlic Jalapeño

·        Hog Toss MW Smokers

·        Butter

·        Brown Sugar

 

Setup your Green Egg or smoker of your choice to run at 300 Degrees indirect. We tossed in a couple chunks of apple would for smoke.

Cut your steaks as shown in the video using the collar portion of the butt. You can cut them as thin or thick as you like.

Cook until the pork steaks reach the desired color you prefer, usually this is around 165 degrees, we flipped them halfway through the cook.

We wrapped these in aluminum foil with Brown Sugar and Butter, we used “squeeze” butter. You can use regular butter.

Once wrapped cook until the pork steaks reach an internal temp of 202 -205 degrees.

Remove from foil and place back on the grill and sauce all sides. Let your sauce setup for about 10 minutes. Remove and enjoy!
