🍑 What You'll Need

  • 2 cans (15 oz each) sliced peaches — drain the juice from one can
  • ½ cup brown sugar
  • 1 tbsp cinnamon
  • 1 tbsp vanilla extract
  • 1–2 shots of bourbon (optional, but highly recommended)
  • 1 box yellow cake mix
  • 2 sticks of butter, cut into pads

How to Make It

  1. Preheat your oven to 350°F.
  2. In a cast iron skillet, combine the peaches (with one can's juice drained), brown sugar, cinnamon, vanilla extract, and bourbon. Stir gently to combine.
  3. Pour the dry yellow cake mix directly over the top of the fruit mixture. Spread it out evenly — don't stir it in.
  4. Lay the butter pads evenly across the top of the cake mix, covering as much surface as you can.
  5. Place in the oven and bake for 35–45 minutes, or until the top is golden brown and bubbly around the edges.

— Don't have bourbon on hand? No problem — it's completely optional. The cake is still incredible without it.
— Fresh summer peaches work great in place of canned. Just slice them up and add a little extra brown sugar to compensate for the missing syrup.
— Cast iron holds heat beautifully — the bottom layer of peaches will be jammy and caramelized. Don't skip the skillet.
— Leftovers (if you have any) reheat great in a 300°F oven for 10 minutes.
