In Big Daddy's opinion, the best brisket comes off an offset smoker — and this cook was no different. Running hot and fast at 275–300°F over post oak, this choice brisket developed a beautiful smoke ring and bark that would make any pitmaster proud. Tender, juicy, and loaded with flavor from start to finish. And the best part? It was done in just over 5 hours.

Don't let anyone tell you a choice brisket can't compete. With the right technique — a good injection, solid seasoning, and knowing when to wrap — you can turn a grocery store brisket into something that rivals any competition cook.

🥩 What You'll Need

  • 1 beef brisket, 14–16 lbs
  • 1/2 cup Heath Riles Beef Injection
  • 16 oz beef broth (for injection)
  • Heath Riles SPG Rub
  • Heath Riles Steak & Chop Rub
  • Post oak splits
  • Beef tallow (for the wrap)
  • Butcher paper
  • Water (for spritzing)

The Cook

  1. Trim the brisket — remove any heavy fat and silver skin. You want good meat exposure for the rub and smoke to do their job.
  2. Inject — mix the beef broth and Heath Riles Beef Injection. Inject every inch across the entire brisket for even moisture and flavor throughout.
  3. Season — apply a medium coat of both the SPG Rub and Steak & Chop Rub, making sure to get even coverage on all sides. Don't skip the sides and edges.
  4. Fire up the offset — set your smoker to run at 275–300°F using post oak splits. Let it come to temp and stabilize before the brisket goes on.
  5. The cook — place the brisket on the smoker. Spritz with water at the 1.5 hour mark and again at 2.5 hours.
  6. Check the bark — when the brisket reaches 180°F internal temp and you've achieved your desired bark, it's time to wrap.

  1. Wrap — lay out your butcher paper and add a bit of beef tallow before placing the brisket on it. Wrap tightly — get that paper snug around the whole brisket.
  2. Finish the cook — return to the smoker. Start probing for tenderness once the internal temp hits 200°F. This brisket finished at 209°F.
  3. Rest — this step is non-negotiable. Rest the brisket in a Cambro for 2 hours before slicing. The rest is where the magic happens.
  4. Slice and serve — slice against the grain, starting with the flat. GET YOU SOME! 🤙

  • Don't skip the injection — it's what keeps a choice brisket moist through a hot and fast cook.
  • Post oak is the gold standard for brisket. It gives clean, strong smoke without going bitter.
  • The bark check at 180°F is more important than the temp — trust your eyes. If the bark isn't set, give it more time before wrapping.
  • Beef tallow in the wrap adds richness and helps keep the bark from getting soggy. A little goes a long way.
  • The 2-hour Cambro rest is not optional. It's what separates a good brisket from a great one.
  • A choice brisket can absolutely hang with prime — don't let the grade scare you off.
