Pep & Jack Chicken Wrap

 

This wrap recipe was given to me by a good friend we do BBQ Comps with. This is delicious combination of Pepperoni & Chicken. The Peppers & Onions add a great balance and the creaminess of the melted cheese add just enough kick! A quick easy variation on wrap we hope you enjoy!

 

·        4 Burrito Wraps

·        2 Yellow Bell Peppers

·        1 large Sweet Onion

·        5 oz. Pepperoni Cubed

·        2 Lbs. of Chicken Breasts Cubed

·        2 Cups of Pepper Jack cheese

·        Ranch dressing for dipping or in the wrap

·        Cajun Seasoning of your choice

·        All Purpose Seasoning of your choice

 

We used our griddle for this recipe but this could be easily done on your stove top with a large skillet.

Sauté the vegetables until tender with just a bit of char.

Fry up that pepperoni and Chicken, make sure you get a good crust on both. Be sure your chicken reaches 165 degrees.

Warm your wraps and build them as large as you like. Make sure you get plenty of each ingredient along with a decent amount of that cheese on top.

Wrap nice and tight, wrap in foil and place back on the griddle for a couple minutes on each side. Remove and enjoy!
