Smash Burger ‘The Hammer”
Polish Smash Burger ‘The Hammer”
These burgers were certainly the best I have ever made, and maybe the best I have eaten. This burger was tender and juicy, packed with flavor that is nicely balanced between the sweet onions and the tartness of the kraut and mustard. The creamy cheese and pretzel roll bring it to a delicious togetherness!
· 1 LB of Fresh Loose Kielbasa
· 1 LB of Ground Chuck
· 2 TSP Garlic Powder
· 2 TSP Onion Powder
· 1 TSP of Black Pepper
· 1 TSP of Smoked Paprika
· 2 Large Sweet Onions Sliced
· 2 TBSP of Champagne Dill Mustard
· 4 Pretzel Hamburger Buns
· 2 Cups of Sauerkraut (Kuhne Brand)
· 6 Slices of Muenster Cheese
Fire up your griddle to medium high heat. If needed remove the Kielbasa from the casings. Combine the Kielbasa and Hamburger together along with the seasoning. Mix ingredients thoroughly. Weigh out 6oz meat “balls”, you should get 5-6. Sauté your onions on your griddle until well caramelized. Place the balls of meat on the griddle and smash until ¼ inch thick. Cook until the patties reach your desired doneness. Add the sauerkraut to the griddle to warm and brown slightly. Place a slice of cheese on each patty. Build your burger, we toasted the rolls, added mustard to each. Place one patty down, added the onions, then the sauerkraut and then repeated the process for a two patty burger. You can certainly just
make single patty burgers.
