Classic Potato Salad

 

Potato Salad; the quintessential summertime dish. This is a simple side for any picnic or family gathering and can be easily modified to add your favorite ingredients! We hope you enjoy this recipe as much as we do and make it one of your go-to dishes!

 

·        3 LBS Red Skin Potato’s

·        3/4 Cup Diced Red Onion

·        3 Stalks of Celery Finely Diced

·        3 tsp Salt

·        3 tsp of Black Pepper

·        1.5 Cups of Mayo

·        2 TBSP of Dijon Mustard

·        Juice of 1/2 Lemon

·        1/4 Cup of Chopped Dill Pickles

·        2 tsp of Smoked Paprika

·        4 Hard Boiled Eggs

 

Start by giving your potatoes a good rinse with water to clean, then dice into one-inch cubes. Place your potatoes into a pan to boil, cover with water and add 2 tsp of Salt. Boil for 12-15 minutes or just until they are fork tender. Do not overcook!

Once done, run cold water over the taters to stop the cooking process and cool.

Prepare your dressing by adding all of the other ingredients except the egg to a mixing

bowl. Whisk until all ingredients are fully incorporated. Once the potatoes are cooled add them to the bowl and rough chop the eggs, add them to the bowl. Fold all the ingredients together being careful not to over mix. Once fully incorporated cover and place into the refrigerator for at least 2 hours, overnight is better.
