· 6-8 Cloves of Garlic
· 2.5 Sticks of Butter
· 1 TBSP of Fresh Thyme
· 1 TBSP of Fresh Poultry Blend
· 1 TBSP of Fresh Sage
· 3 TSP of All Purpose Rub (Salt, Pepper, Garlic)
· 2 Cups of Chicken Stock
Set your Pellet Smoker to 325 Degrees. Combine all of the fresh herbs and 4 cloves of garlic (minced) with the softened sticks of butter. Add 1 TSP of the All Purpose Seasoning to the butter & herbs then mix.
You can use a spatula, mixer or your hands. Once combined using your hands spread the butter mix under the skin of each breast. Try to cover the entire breasts without tearing the skin. Use the remaining butter mixture to coat the entire outside of the bird. Season the outside of the turkey with the remaining All Purpose Rub. If you like more or less seasoning adjust to your likening.
Quarter the Orange, Apple and Onion and place in the cavity of the turkey, toss in the remaining Garlic as well.
Place in the grill and cook for one hour, then rotate the turkey 180 degrees for even cooking.
At 2 hours we placed the turkey into a foil pan on a rack with a stick of butter and 2 cups of chicken stock.
We then basted the turkey every 20 minutes.
At the three-hour mark placed aluminum foil over the pan to finish.
Total cook time was around 4 hours. We took the thigh to 170 degrees and the breast to 165. We let rest 30 minutes prior to carving.
