Twice Baked Sweet Potatoes

These Sweet Potatoes are absolutely delicious! If you’re looking for a sweet and savory addition to your holiday meal, this would be it!

 

·       6 Large Sweet Potatoes

·       1 Tsp. of Salt

·       1 TBSP of Buttery Cinnamon Roll Seasoning

·       1 TBSP of Pumpkin Pie Seasoning

·       1 TBSP of Cinnamon

·       1/4 Cup of Sugar

·       3/4 Stick of Melted Butter

·       1/8 Cup of Maple Syrup

·       2-3 TBSP of Half & Half

·       Bag of Miniature Marshmallows

 

Start by washing and baking your sweet potatoes.

Once baked let cool to touch. Slice the top of each potato and use a spoon to remove the inside of each and place into a bowl. Leave enough in each potato to securely hold the stuffing inside the tater.

In your potato bowl add all of the above ingredients. Whip the potatoes until smooth. You want to make sure they have a thick consistency and not too wet.

Spoon the mashed potatoes into each shell you have created. Push the marshmallows down into each tater. Use as many or as little as you like. Place on a cookie sheet and cook at 375 degrees until bubbly.

While this is baking, mix your topping using all of the ingredients below.

Turn your oven to broil, place the topping on each potato and put on under broiler for 5 minutes. Keep watch on this part, this mixture will burn very quickly.

Once the topping browns, remove from the oven to cool!

 

For the Topping

·       1/2 Cup of Chopped Pecans

·       1/8 Cup of AP Flour

·       1/8 Cup of Light Brown Sugar

·       1/3 Cup of Melted Butter
